Poached Prawn with Lavender Mayonnaise & Mixed Organic Salad

• Salad Ingredients

  • 350g Prawn
  • 10g Lavender Flower
  • 100g Mayonnaise
  • 50g Sugar Icing
  • Juice of two limes
  • 100g Mixed Organic Leaf Vegetables
  • 5g Raisin (green)
  • 5g Raisin (red)
  • 2g Cashew Nut
  • Sugar

1. Salad Preperation

   • Bring water to a boil in a pot and put in the prawn. Once cooked, set the prawn aside to dry.
   • To make the salad sauce, mix mayonnaise with lavender flower, lime juice, sugar and sugar icing.
   • Place salad sauce onto a plate and arrange the prawn on top.
   • Garnish with a little mayonnaise and it is ready to be served.
