Coconut Nests

Ingredients

• • 1 Cup Sweetened Condensed Milk
  • 2 Egg Whites
  • 2 tsp Vanilla Extract
  • ¼ tsp Salt
  • 5-6 Cups Shredded Sweetened Coconut
  • Candy Coated Chocolate Easter Eggs

1. 1. Combine everything except the coconut in a bowl and mix.
   2. Add 5 cups of the coconut and stir. If mixture appears too wet, go ahead and add more coconut.
   3. Place small scoops into greased mini cupcake/muffin tins and press an indent into the center with your thumb. Bake at 350 degrees F just until the edges are golden brown (about 15 minutes.)
   4. The nests will puff up slightly once baked, so quickly press your thumb in the center once more while warm to keep that nest look intact. Cool slightly.
   5. Remove nests from tin and cool completely.
   6. Add mini Easter eggs!
