Pear Financiers with Brown Butter Icing

  • 120 g Unsalted Butter
  • 100 g sifted Cake Flour
  • ½ tsp Baking Powder
  • ¼ tsp Salt
  • 55 g Light Brown Sugar
  • 50 g White Sugar
  • 2 Large Eggs
  • ½ tsp Vanilla Extract
  • ½ Tbsp Brandy
  • 1 Pear (peeled, cored and grated)

• Brown Butter Icing

  • ½ cup Unsalted Butter
  • 2 cups Icing Sugar
  • 2 tsp Vanilla Extract
  • 2 Tbsp Milk

1. Financiers

   1. Whisk together the sifted flour, salt and baking powder
   2. Cream butter and sugars with a paddle attachment in a mixer until fluffy
   3. Add eggs slowly, vanilla and then brandy
   4. Add the grated pear and finally the dry ingredients
   5. Mix just until incorporated
   6. Portion into a financier mould and bake for 15 minutes at 375 degrees

2. Brown Butter Icing

   1. Brown the butter over a medium low flame and cool slightly
   2. Whisk everything together until smooth (use more milk if necessary)
   3. Once you have desired consistency, dip tops in icing
