BITE ME: BACON AND EGG PIZZA

Ingredients

pizza dough
- 2 ½ cups water
- 1 tsp yeast
- ¼ cup extra virgin olive oil
- 5 and 1/3 cups bread flour
- 2 tsp salt

bacon and egg pizza
- 1 pizza dough
- 1 tbsp semolina flour
- ½ cup tomato sauce
- 1 cup mozzarella cheese
- 6 slices pancetta
- 2 organic eggs
- 7 pieces watercress or arugula
- 7 shards of asiago
- 1 tsp olive oil (for brushing on the crust)

pizza dough
- in a kitchen aid, mix water and yeast on low.
- add extra virgin olive oil, bread flour and salt. mix on speed two for three minutes.
- once mixed, place the dough in a greased bowl, cover, and let ride in a warm place until dough doubles in volume – approximately one hour.

bacon and egg pizza
- on a lightly floured surface, roll out pizza dough to desired size.
- on you pizza paddle, sprinkle semolina flour and then place your dough on top. spread the tomato sauce evenly on the dough leaving a half inch of dough showing on the outside.
- spread mozzarella evenly.
- slice and add pancetta.
- bake in oven at 500°f for three minutes.
- crack one egg on each side of the flat bread. bake for another 4 minutes. remove from oven.
- add asiago and watercress or arugula.
- brush crust with evoo. cut and serve.
Other Notes
breakfast for dinner is always a winner! this bacon and egg pizza is changing up the game.
