Fairmont Gold Raisin Oatmeal Cookie

Ingredients

- 2/3 cup Butter
- 2/3 cup Crisco/shortening
- 1 cup Brown Sugar
- 1 tsp Vanilla Extract
- 1 1/2 cups Bread Flour
- 1 1/2 cups Pastry Flour
- 1 tsp Baking Soda
- 2 cups Raisins
- 1 tbsp Salt
- 5 Eggs
- 5 1/3 cups Oats
- 95ml Water (optional)

- Cream the butter and shortening with the sugar, vanilla, and brown sugar for 3 minutes, do not over cream
- Once the butter mix is creamed, add the dry ingredients (sifting is not necessary) on low speed if using a mixer. If there are lumps briefly beat at low speed (do not over mix)
- Add the eggs on low speed
- Add the oats. Note: The egg mixture does not have to be thoroughly mixed before adding the oats
- Once the oats are mixed in, check the consistency of the batter. If the batter is too stiff, gradually add the water until the mixture becomes soft yet scoopable
- Form balls out of the cookie mixture making each ball approximately 2”
- Bake at 160°C (320˚F) for 15-18 minutes
- The Bread and pastry flour can be substituted with all-purpose flour by adding the amounts together (3 cups/308g)
