Savory Yogurt Parfait

  • 1 Cup of Greek yogurt
  • 1 Cup of Baby spinach
  • 1 Cup of Chickpeas
  • ½ Cup of Cherry or Grape Tomatoes
  • 1 Tablespoon of Chopped Pistachios
  • ½ English Cucumber
  • ¼ Cup of Quinoa
  • 2 Chicken Breasts
  • 1 Tablespoon of Chili Powder
  • 2 Tablespoon of Honey
  • 3 Tablespoons of Olive Oil
  • ½ Cup of Water
  • Salt and Pepper

1. 1. In a small pot put quinoa and water with 1 tablespoon of oil and pinch of salt
   2. Bring to boil and reduce heat to low cover and let sit for 10 min then turn off and let cool
   3. Toss chickpeas, chili powder and 1 tablespoon of olive oil and place in a baking sheet at 350F for 15min and let cool
   4. In a pan add 1 tablespoon of olive oil and sear chicken breast and place in the oven for 15 min and chop
   5. While you wait slice tomatoes in half, dice cucumber and chopped spinach, mix yogurt and honey
   6. In a small mason jar do layer with yogurt, chickpeas, pistachios, quinoa, more yogurt, tomatoes, cucumber, chicken and spinach cover and take it to school, work, etc.
