Chocolate Sphere "Romanoff" flambe

• Main ingredients:

  • 30g - black chocolate 72%
  • 40g - fresh strawberry
  • 1gr - mint
  • 20g - seasonal berries
  • 60g - vanilla ice cream
  • 10g - sauce "Romanoff"
  • 25g - liquor "Cointreau"

• Vanilla ice-cream:

  • 1l - sour cream
  • 400g - milk 3,2%
  • 70g - glucose
  • 10g - yolk
  • 250g - sugar
  • 1g - vanillin

1. Vanilla ice-cream:

   1. Sour-cream, milk and glucose boil in a pot
   2. The yolk, sugar and vanillin beat in the mixer until smooth
   3. Pour the cold milk into the egg yolks and mix well
   4. All mass of milk and yolks pour in ice cream machine

2. "Romanoff" sauce:

   1. Take 500g of balsamic vinegar and 500 g powdered sugar. Mix well all ingredients

3. Chocolate sphere:

   1. Inside of the scope of a chocolate put sliced strawberries with mint, pour "Romanoff sauce"
   2. On top of berries, put vanilla ice-cream and cover with a chocolate sphere

4. Decoration:

   1. Decorate the dish with seasonal berries and pour the burning liquor "Cointreau"
