Salmon tartare with guacamole and truffle sauce

• Main ingredients:

  • 400g - salmon fillet
  • 1pc - shallot
  • 25gr - capers
  • 40g - salmon caviar
  • 1g - salt
  • 1g - pepper

• Guacamole:

  • 1/2pcs - avocado
  • 50g - olive oil
  • 15g - fresh lemon juice
  • salt/pepper to taste

• Truffle sauce:

  • 100g - mayonnaise
  • 15g - truffle oil
  • 15g - truffles

• Decoration:

  • Radish
  • Capers
  • Mikrogrin peas
  • Fried rice paper
  • Dry ice

1. Guacamole:

   1. Put avocado with oil and fresh lemon juice in a blender until smooth
   2. Add salt and pepper to taste

2. Main preparation:

   1. Salmon fillet, shallots and capers cut into small cubes, add salt and pepper to taste
   2. Mix well ingredients, put out on parchment, twist in a roll and carefully serve on a plate

3. Decoration:

   1. Start decorate with guacamole dots and truffle sauce. Then radish slices, fried rice paper and caviar spread along the tartare. Finish with capers and mikrogrin peas.
