Mini Tuna Tostadas

• • 6 oz. Fresh tuna
  • 1 tbsp. Sesame oil
  • 1 tsp. Srirasha sauce
  • 1 oz. Chipotle mayonnaise
  • 1 oz. Pea puree
  • 2 oz. Lemon juice
  • 3 pc. Fried corn tortillas (tostadas)
  • ½ pc. Mango
  • 2 oz. Olive oil
  • Salt

1. 1. 11. Marinate the tuna with zest and lemon juice, sesame oil, Srirasha sauce and salt to taste.
   2. 2. Fry tortillas in oil until to a crisp.
   3. 33. The tortilla chips are placed on a plate and are placed above the previously prepared tuna.
   4. 4. Chipotle mayonnaise and pea puree as dots on the plate are placed
   5. 5. It ends with mango finely chopped, parsley leaves and drops of olive oil.
   6. 6. For chipotle mayonnaise simply mix pureed chipotle marinated with mayonnaise and lemon juice to taste.
   7. 7. Pea puree to simply boil in salted water and garlic for three minutes, drain it and liquefy, salt to taste.
