PORK ENTRECOTE WITH PUMPKIN AND APPLE SALAD

• • 2 pc 8 oz pork steak
  • 2 pc whole green apples
  • 4 oz purple cabbage filleted
  • 3 oz fried bacon cut into cubes
  • 2 pc oranges in segments
  • 1 pc carrot
  • 4 oz sugar
  • 1 pc small castilla pumpkin
  • 100 ml plum sauce
  • Pea shoots and radish to garnish

• For the plum sauce:

  • 8 pc plum
  • 2 oz white toasted sesame seeds
  • 1 oz sliced garlic
  • 100 ml orange juice
  • 3 pc guajillo or pasilla chilli
  • 1pc red tomato fresh
  • 60 ml butter

1. 1. Cut the plums into segments and sautée with butter, add garlic, chili, tomato and the toasted sesame seeds and fry for 5 minutes.
   2. Add the orange juice and reduce.
   3. Season with salt and pepper.
   4. Allow to cool and liquefy.

2. Pork:

   1. Season the pork with salt and pepper and grill until fully cooked.

3. For the plating:

   1. Place the stuffed pumpkin and on the opposite side of the plate put the two pieces of pork, garnish with the plum sauce and decorate the plate with pumpkin puree and pea shoots.
