Ingredients

Braised Ham Hocks
- Smoked Ham Hock – 8pc
- Onion – 1pc
- Celery – 4 stalks
- Leek – 1pc
- Garlic – 5 cloves
- Parsley – 10 sprigs
- Black Peppercorns – 1t
- Coriander Seed – 1t
- Bay Leaf – 2pc
- Chicken Stock – 3 liters

Maple Whiskey
- Maple Syrup – ½ cup
- Brown Sugar – ¼ cup
- Whiskey – 1 cup
- Grainy Dijon – 1T
- Dijon Mustard – 2T
- Pineapple Juice – ¼ cup
- Lemon Zest – 1t
- Chili Flake – pinch
- Salt – 1t
Preparation

Braised Ham Hocks
- Cut vegetables into large pieces
- Add chicken stock to a pot and bring to a boil
- In a large braising pan add, thawed ham hock, cut vegetables, herbs and aromatics
- Cover with the hot chicken stock and place into the oven
- Braise at 275F for 2.5-3 hours, until the meat is falling off the bone
- Remove from the oven allowing to cool at room temperature for an hour
- While the ham hocks are still warm, pick the skin carefully off of each one
- Cool in the braising liquid
- Deep fry until crispy and golden brown (5-7) minutes

Maple Whiskey
- Add the whiskey to a sauce pan, and burn off the alcohol
- Once the flame burns out add all other ingredients to the pan
- Cook until the liquid has reduced by 1/3
- Check for seasoning
- Toss crispy ham hocks in the reduced liquid and serve
