Pastry Chef James Wroblewski’s Christmas Wassail Cookies

Ingredients

• • 2 sticks butter
  • 1/3 cup sugar
  • ¾ cup brown sugar
  • 1 Tablespoon honey
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 1/8 teaspoon ground all spice
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • Pinch of ground cloves
  • 1 egg
  • ½ teaspoon vanilla
  • 1 ½ cup flour
  • ½ teaspoon baking soda
  • 1 cup butterscotch chips
  • 1 cup diced dried apples
  • 2 Tablespoons Madeira wine
  • 2 Tablespoons beer

1. 1. Preheat oven to 325 degrees F.
   2. Cream together butter, sugars, honey, salt, and spices for 8 minutes.
   3. Add in egg and vanilla and mix well.
   4. Sift flour and baking soda, and add to the butter mixture. Mix until just combined.
   5. Add butterscotch chips and dried apples and stir.
   6. Add the wine and beer and combine one final time.
   7. Scoop tablespoonfuls onto a baking sheet and bake for 10-12 minutes.
