Ingredients
- Yield:
- 12-16 popsicles

Watermelon Patch Popsicles
- 6 leaves gelatin
- 150g sugar
- 150g water
- 50g lime juice
- 50g orange juice
- 1000ml watermelon juice
- 100ml tequila reposado
- 30ml orange curacao
- 200g cucumber (peeled, deseeded and ½” diced)
- 200g cucumber (peeled, deseeded and ½” diced)

Watermelon Pop Rock Chile Salt Garnish
- 10 packs watermelon flavored pop rocks
- 1Tbsp kosher salt
- 1tsp chile powder

Popsicle
- Bloom the gelatin leaves in cold water for 5 minutes.
- Combine the sugar and water and bring to a boil. Drain and add the gelatin leaves to the hot syrup, mix to disperse.
- Combine the sugar syrup with the juices and liquor and mix well
- Evenly divide the cucumber and pineapple into popsicle molds
- Fill the popsicle molds with the watermelon mixture, cover with the popsicle mold top and place wooden popsicle sticks. Freeze 24 hours.

Watermelon Pop Rock Chile Salt Garnish
- Combine the pop rocks, salt and chile powder.
- Remove the Watermelon Patch Popsicles from the molds,
- Sprinkle all sides with the watermelon pop rock chile salt garnish and serve immediately.
