Ingredients
- Yield:

Miso Jalapeno Dressing
- 1/4 cup white miso paste
- 1 each lemon juiced
- 1/8 cup rice wine vinegar
- 1 each jalapeno
- 1 cup extra virgin olive oil
Heirloom Tomato Salad
- 2 cups arugula
- 2oz jalapeno miso dressing
- 4 ea heirloom tomatoes
- 4oz chopped marcona almonds

Miso Jalapeno Dressing
- Combine the miso, jalapeno, rice vinegar and lemon in the blender.
- Slowly add the olive oil in a steady stream to form an emulsification.
- Adjsut season as needed with lemon or miso for acidity or saltiness.
Heirloom Tomato Salad
- Toss the tomatoes with half of the miso dressing and toss the arugula with the other half of the dressing in a separate bowl.
- Arrange the tomatoes in the plate and then mound the arugula in the center.
- Garnish the top of the salad with the chopped marcona almonds.
