Yield:
Serves 4
20 Scallops
1/4 cup diced bacon
1 1/2 cup heavy cream
1 tbsp. diced chives
1/2 cup butter
1/2 tsp. lemon juice
Parmesan cheese
Salt and Pepper to taste

In a large skillet, heat canola oil and saute scallops on one side until golden brown
Add bacon and heavy cream. Bring to a boil.
Add parmesan cheese, lemon juice, chives, and salt and pepper
Place scallops in individual shells
Serve 5 scallops per person
