Three Beet Salad

  • 25g candy cane beet
  • 25g diced red beet
  • 25g yellow beet sliced
  • 30g almond goat cheese crumble
  • 20ml honey thyme dressing
  • 15g beet greens/arugula

• Almond Goat Cheese Crumble

  • 500g goat cheese soft
  • 150g dried blueberry
  • 150g dried cranberry
  • 200g roasted slivered almond
  • 5g chopped parsley and thyme
  • 1 zested lemon

• Honey Thyme Dressing

  • 100ml honey
  • 150ml white wine vinegar
  • 50g shallot chopped
  • 20g garlic chopped
  • 5g parsley
  • 50ml lemon juice
  • 50ml dijon
  • 450ml canola oil
  • 10g chopped thyme

1. Almond Goat Cheese Crumble

   1. 1 coarsely chop fruit and almonds, fold into soft goat cheese

2. Honey Thyme Dressing

   1. Combine all ingredients, put all in blender then slowly add oil to emulsify, season to taste

3. Beets

   1. Cook beets until desired fork tender
   2. Let beets cool before handling
   3. Slice, chop or dice beets as desired
