Tomato Watermelon Salad

Ingredients

Yield:

1 plate

• • 1ea Burrata cheese (halved)
  • 2oz Watermelon (scooped/med diced)
  • 1.5 oz Heart of palms
  • 2 ea Avocado (sliced)
  • 4 oz Heirloom tomato
  • 1 ½ oz Balsalmic chipotle vinaigrette
  • Garnish Micro greens
  • Flake salt (to taste)
  • Black Pepper (to taste)

• Balsalmic Chipotle Vinaigrette

  • 7oz Balsamic Vinegar
  • 5 oz Low sodium soy sauce
  • 6 oz Honey
  • 5 oz Rice vinegar
  • 2 oz Chipotle (pureed)
  • 1 ½ oz Olive oil
  • 7 ½ oz Canola oil
  • Salt (to taste)
  • Ground black pepper (to taste)

1. 1. On the appropriate plate, place tomatoes and heart of palms staggered across the plate
   2. Add avocado across the top of tomatoes and heart of palms
   3. Drizzle 1 oz of the vinaigrette on top of those 3 items.
   4. Place cheese on top in the center
   5. Drizzle the remaining vinaigrette on cheese and around plate
   6. Garnish with watermelon, micro greens and salt
   7. Garnish cheese with pepper

2. Balsalmic Chipotle Vinaigrette

   1. Place all ingredients except oil into blender
   2. While blender is running on low speed, slowly add oil and emulsify
   3. Reserve
