Foraged Mushroom and Aggasiz Hazelnut Soup – Fairmont Waterfront
This soup has been a favorite with our guests in ARC since Chef Alessandro put it on the menu – with its rich creamy texture it isn’t hard to see (or taste) why. Our mushrooms are foraged for us on Vancouver Island while our culinary apprentices hand-picked the hazelnuts in nearby Agassiz – we like to think using local produce makes it taste better – come try it for yourself! www.arcdining.com

Chef Tamara Philipp of The Waterlot Inn at The Fairmont Southampton in Bermuda serves up a cold-weather treat that's both hearty and healthy. This creamy green pea & spinach soup has all the texture & flavour of a cream-based soup without all the extra fat. Scattered with hints of mint, it is vibrant and delicious!
Leek and Potato Soup with Porcini Dust and Forest Mushrooms – Fairmont San Jose
Warm up with a bowl of our Leek and Potato Soup with Porcini Dust and Forest Mushrooms! This soup is a healthy, flavorful alternative to classic Leek and Potato Soup without all the butter and cream. Sautéed forest mushrooms give the soup a pleasant savory taste, known as umami. An excellent winter warmer!
Neuville Corn & Smoked Paprika Chowder – Fairmont Le Chateau Frontenac
A wonderful mix of colors and flavors, this chowder is the perfect starter to a gourmet winter supper! Bon appétit!
Venison Stew – Fairmont Tremblant
A rich, hearty, flavorful stew to enjoy with a nice glass of wine and French baguette.
Warming Mulligatawny Soup – Fairmont Winnipeg
During the long and cold Winnipeg winters, Executive Chef Eraj Jayawickreme enjoys making this flavourful soup. The name originates from the Tamil words mullaga/milagu and thanni and can be translated as "pepper-water". The spicy heat from the curry powder makes this wonderful and warming after a chilly day outside and the mango adds a cheerful and exotic twist.
