The Fairmont Banff Springs Sweet & Sour Cabbage Soup

Ingredients

• • 8oz Vegetable Broth
  • 1 Tbls Soy Sauce
  • 1 Tbls White Vinegar
  • 1 Tsp White Sugar
  • 1 Tsp Lemon Juice
  • 1.5 Tsp Cornstarch
  • 2oz Purple Cabbage
  • 0.5oz Diced Carrot
  • 0.5oz Diced Yellow Onion
  • 0.5oz Diced Celery

1. 1. Sweat all vegetable until half cooked in a little oil. Add remaining ingredients except cornstarch. Bring to a boil.
   2. Mix cornstarch and a little cool water to make a runny paste. Stir into soup to thicken. Let boil for 2min.
   3. Add more soy, sugar or vinegar to your taste for salt, sweet or sourness.
